It took years before I crossed paths with Francis Mallman, although I had eaten at two of his restaurants in Argentina: Francis Mallman 1884 in Mendoza and Patagonia Sur in Buenos Aires (Mallmann is at right in the photo above).
We didn't meet down there but in Hollywood, where this superstar chef from South America cooked a spectacular barbecue dinner. You can read about it at Squid Ink, LA Weekly's food blog.
Helping out at the party were The Gauchos, an Argentinian catering group that stages barbecues around town, including one at San Antonio Winery's recent 95th anniversary party.
The food at Mallmann's event was delicious. The meats were unseasoned to show off how good they were. Then you could add condiments at the table.
As a teaser, look at skirt steak, hot off the grill, cut into appetizer pieces and topped with chimichurri. It was fabulous.
